Our Journey

After years of honing my craft behind the bar in the Bendigo region, I realized that the local cocktail scene had immense potential for growth. However, the limitations of working within the confines of established venues meant I couldn’t fully bring my creative ideas to life. That’s when I decided to take matters into my own hands.

I believe that cocktail service should be a meticulous craft, where both taste and presentation are given the attention they deserve. While many traditional cocktail bars focus on drinks that require an acquired taste, I wanted to create a space that catered to everyone — including those simply looking for something sweet, refreshing, and full of flavor.

So, I set out to build a bar without the constraints of cost — not sacrificing cost for quality — where every cocktail would be an experience in taste and creativity. The result was Island Breeze — a mobile tiki bar designed to deliver the finest cocktails in the most fun, unique setting. It took almost 3 years of dedicated work to transform an old caravan into the vibrant, one-of-a-kind bar you see today (be sure to check out the transformation on our socials!).
